Sweet Potato “Fries”

I LOVE French Fries. Waffle Fries. Anything and everything greasy. And buttery. BUT, I can’t eat like that anymore. Acid Reflux has taken over my life and it’s been time for quite a few diet changes.

While I must admit I’m not thrilled about it, it sure has given me a good excuse to do LOTS of experimenting in the kitchen!

Starting with these Sweet Potato “Fries”. This is adapted from The Easy Acid Reflux Cookbook by Karen Frazier, which I picked up at the Bargain Rack at Barnes and Noble. WHAT A LUCKY FIND. I started adjusting my meals to recipes from Karen’s cookbook, while putting my own spin on them as well, and my stomach issues are slowly but surely reducing themselves!

The recipe in her book is called Sweet Potato Oven “Fries” And while she keeps hers simple yet delicious with Olive Oil and Sea Salt for the seasonings, I kick mine up a notch with a few drops of Tabasco Sauce and Paprika, topped with some dried parsley.

Of course, we can’t forget some Maple Syrup for dipping!


You know you want some. RECIPE BELOW!! 



2 Tbsp Olive Oil

Sea Salt (Sprinkle to your liking)

1 Medium Sweet Potato cut into 1/4″ thick strips

Tabasco Sauce (a few dashes depending on how spicy you want them)

1 tsp Paprika

Dried Parsley (to your liking)


  1. Prep a baking pan with some cooking spray.
  2. Toss the sweet potatoes in the olive oil and seasonings
  3. Bake for 25 minutes
  4. Once out of the oven, sprinkle with more sea salt and dried parsley. Dip in Maple Syrup or dressing of your choice. Honey Mustard works great as well!
